TARTAR OF FRESH AND SMOKED SALMON ON A MOUSSE OF AVOCADO

Avocados are characteristically buttery yet subtly flavorful pear-shaped fruits of Central American origin. Unlike most other fruits, they feature high fat content and carry more calories. Nonetheless, they are among the popular fruits having one of the best nutrition profile and health benefiting properties. Avocados are often prepared with shrimps, tuna and salmon.

Ingredients

Tartar

  • 600 g fresh salmon netting
  • 400g smoked salmon
  • 4c. tablespoons finely chopped capers
  • 4 c. tablespoons finely chopped shallot French
  • 4 c. sour cream
  • 24 basil leaves, finely chopped fresh dill or
  • 2clove garlic, finely chopped
  • 2 c. tablespoons olive oil
  • The juice of one lemon
  • 1 c tablespoon mustard
  • 1 tablespoon soya sauce
  • 1 tablespoon honey
  • 1 tablespoon balsamic vinegar
  • Salt and pepper to taste

Guacamole (avocado mix)

  • 2 avocados
  • The juice of one lemon
  • 4 finely chopped garlic cloves
  • 2c. tablespoons olive oil
  • Salt and pepper to taste
  • 10 cl cream
  • 2 tablespoons mayonaise

Preparation

  • Step 1

Using a knife, finely chop fresh salmon

  • Step 2

Mix fresh salmon with all the other ingredients. Keep fresh for 1 hour

  • Step 3

Serve with guacamole. Blend in a food processor all ingredients for guacamole until a puree onctueuse.Tu can add tabasco to add more flavor.

  • Step 5

To make a beautiful presentation I put them in ramekins and pour it on the plate it’s a good circle and cover with guacamole.

Put curls of smoked salmon on top.

Garnish with parsley
