Som-Tam Thai (Thai papaya salad)

I. Som-Tam Thai (Thai papaya salad)  

Somtum the best dish I would suggest you to make it in E-sarn cuisine. It is not only delicious but also very healthy. In Thailand we have various kind of Somtum. Please check some of them as below….


8 Serves


- 2 scraped papaya

- 2 kilos cherry tomatoes

- 100 g. small garlic

- 200g. small red chili

- 1/2 kilo lentils

- 1/2 kilo fried peanut

- 1 carrot

- 3 yellow eggplant

- 5 olives

- 3 eggplants

- dried small shrimp


Seasoning    1 serve

- 1 tbsp. fish sauce

- 1/2 tbsp. lime juice

- 1 tbsp. palm sugar

- 1 tbsp. tamarind juice

- 1/2 tbsp. syrup



  1. Place garlic and chili into the mortar, grind with pestle coarsely, then add dry shrimp and continue grinding
  2. Add palm sugar, and grind till it melt, then add grated papaya , carrot, long bean , tomato and peanut . After that, seasoning with fish sauce and lemon juice. The original taste has the same level of sweetness, spiciness, and sourness.
  3. Topping with peanut, ready to be served


II. Som-Tam with crab and fermented fish paste

Added ingredients                       8 serves

- 10 salty crabs

Added Seasoning              1 serve

- 1 tbsp. fermented fish sauce


  1. Put garlic and chili in the mortar, grind with pestle coarsely, then add long bean grind it finely.
  2. Add tomatoes, lime juice, palm sugar, fish sauce, fermented fish sauce and mixed well with pestle.
  3. Add papaya and follow by fermented crab (pull out and discard crab tissue skin from the inside) and lightly grind and mix it well.
  4. Taste and season as you wish, ready to be served.


III. Tam-Sua (Thai/ fermented fish paste)

Added ingredients                       8 serves

- 2 kilos white noodle

  1. Doing it the same way, but only adding lightly fermented rice noodle.


*** Among Thai people, it’s popular to eat with fresh vegetable and sticky rice.
