PANNA COTA WITH RED FRUITS

The traditional Italian panna cotta dessert is usually served with red fruits coulis and simple to make at home with an easy receipe

Ingredients for 4 persons:

4 moulds or trays
olive oil
4 gelatin leaves(7 x 1,8 g)
50 cl fresh cream
50 gr granulated sugar
1 teaspoon of vanilla-essence
DIRA raspberry coulis
DIRA red fruit mix
fresh mint leaves for decoration

Directions:
Impregnate a brush with some olive oil and brush the inside of the moulds. Soak the gelatin leaves in cold water for 5 minutes to soften, then remove and gently squeeze to remove any excess water. Put aside.

Put the milk, the cream and the sugar in a small saucepan and warm this up slowly (don’t let it boil). Stir continuously to dissolve the sugar. Remove the saucepan from the heat and add the gelatine leaves to the mixture until these are completely dissolved. Add the vanilla-essence. Pour the mixture into the moulds and put in the refrigerator for 6-8 hours to stiffen.

How to serve: put the DIRA raspberry coulis on the plate, remove the panna cotta from the mould and place in the middle of the plate. Garnish with Delights red fruits and fresh mint.
