Egg soup

Egg soup.   4 Serves

Ingredients

-          Water                                                                   4 cups

-          Soy Sauce                                                            2 Tbsp.

-          Salt                                                                         ½ Teasp.

-          Sake                                                                      1 Tbsp.

-          Dashi ( Japanese flavored stock )              3 teasp.

-          Egg                                                                         2

Methods

  1. Heat the water and add all seasonings until warm but not scalded.
  2. Drop beat eggs into the soup and stir immediately.
  3. Sprinkle chopped spring onion.

This could be added

-          Shitake mushroom

-          Leek

-          Spinach

-          Leafy green vegetables
